食譜: 黑椒蜜糖煎豬扒 (Pork chop in black pepper and honey sauce)

天氣真係好難捉摸呀, 星期六就落足一日雨又凍, 而今日天氣無端端又暖返一啲, 忽冷忽熱, 真係一個唔小心, 就好易傷風呀

今日哩個餸就真係香口惹味啦,

黑椒記得同蒜頭先爆香, 黑椒煮過, 香味先會散發出嚟呀, 之後先煮汁, 個汁要慢慢加生粉水整杰就得

記得要熄火後先落蜜糖同豬扒撈勻, 蜜糖太早落香味會留失, 會得過甜字, 如果唔熄火, 仲有可能會整燶個汁呀

仲有個汁煮時試一試味, 唔好整得太鹹呀, 因為豬扒本身醃過豉油, 同啲汁一撈埋自然就會鹹多少少

1- 無骨豬扒6塊 (6 boneless pork chop)

2- 青椒半個, 切件 (1/2 green pepper, cut into pieces)

3- 中型洋蔥1個, 切件 (1 medium onion, peeled, cut into pieces)

4- 蒜蓉2湯匙 (2 tbsp minced garlic)

汁料 Sauce mix
份量自供參考 (just for reference only)

1- 水2/3杯 (2/3 cup of water)

2- 雞粉1茶匙 (1 tsp of chicken powder)

3- 蠔油1湯匙 (1 tbsp of oyster sauce)

4- 老抽1/2湯匙 (1/2 tbsp of black soya)

做法 Steps

1- 先將豬扒平均兩面井字型拍鬆, 再用基本野醃20分鐘, 快火落油(約1湯匙)起鑊, 將豬扒炒至兩面金黃, 轉中火把豬扒煎熟, 隔油備用(圖1), 粟粉和1湯匙水混合備用

快火落油(約1湯匙)起鑊, 先爆香黑椒和蒜蓉(圖2), 洋蔥和1/2茶匙鹽炒軟, 加入青椒和汁料煮滾(圖3), 逐少加入粟粉水將汁整杰, 熄火再加入豬扒和蜜糖兜勻(圖4), 上碟即成

1-  Beat evenly two side of the pork chop.  Marinade it with basic seasoning for 20 minutes.  Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Fry pork chop until both sides turn brown (fig.1).  Reduce the heat to medium and cook until the pork chops are fully cooked.  Drain well and put is aside (fig.1).  Mix the corn starch with 1 tbsp of water.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic, and black pepper until fragrant (fig.2).  Stir in the shrimps and stir-fry it until cooked (fig.2).  Stir fry the onion with 1 tsp of salt until soft.  Stir in the green pepper and the sauce mix and heat through (fig.3).  Mix in the corn starch until the sauce is thickened. Turn off the heat.  Stir in the honey and pork chop, and mix it well (fig.4).  Dish it up and serve it in hot.
