食譜:青絲香菇燴豆腐 (Vege mix with tofu puff)

落雪啦, 我今朝係公司望出窗外, 終於見到有雪落呀, 哈哈哈, 今日好凍仲好大風, 講真, 真係有啲唔想返工呀

我其實都好怕洗冬菇, 因為唔知係唔係我啲菇唔靚,

洗極都係有啲臭味, 所以我又搾又浸又出水, 再醃一醃先再食, 當然咁做菇味就無乜, 但好過中毒呀

豆卜記得先出水, 係水入面壓一壓, 清除佢本身啲油脂呀, 食起嚟會無咁油膩

1- 冬菇8隻, 浸軟, 去蒂 (8 dried mushroom, soaked, stem off)

2- 中型洋蔥1個, 去衣切絲 (1 medium onion, sliced)

3- 青椒1/2個, 切絲 (1/2 green pepper, sliced)

4- 蒜蓉1湯匙 (1 tbsp minced garlic)

5- 粟米仔8條, 切段 (8 baby corns, cut into section)

6- 豆腐卜6粒 (6 tofu puff)

汁料 Sauce mix
份量自供參考 (just for reference only)

1- 蠔油3湯匙 (3 tbsp of oyster sauce)

 水3湯匙 (3 tbsp of water)

 麻油1茶匙 (1 tsp of sesame oil)

4- 鹽1/3茶匙 (1/3 tsp of salt)

5- 糖1/3茶匙 (1/3 tsp of sugar)

做法 Steps

1- 先將冬菇洗淨, 切件, 用少許(約半茶匙至一茶匙)糖, 生抽, 老抽和麻油醃10分鐘用, 豆卜出水備用

快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 洋蔥和1/2茶匙鹽炒軟, 加入冬菇兜勻炒香(圖1), 加入汁料, 連同青椒, 粟米仔和豆腐兜勻煮滾(圖2), 蓋頂焗1分鐘, 上碟即成

1-  Clean and cut the mushroom into a piece.  Marinade it with a bit (1/2 to 1 tsp) of soya, black soya, sugar and sesame oil for 10 minutes.  Blanch the tofu puff.  Drain it well.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic, until fragrant.  Stir fry the onion with 1 tsp of salt until soft.  Stir in the mushroom and mix it well (fig.1).  Stir in the tofu, baby corn, green pepper.  Stir in the sauce mix, and heat through (fig.2).  Simmer it for 1 minutes with closed lid.  Dish it up and serve it in hot.

1-
冬菇浸軟去蒂後, 最好先壓出菇內的水, 會比較乾淨及能去臭味
