食譜: 通少螞蟻上山 (Minced pork with vermicelli)

日日都好似好凍咁呀, 好在較慢一個小時, 早上見到陽光真係好好多, 個人至少精神一啲呀

本來我諗著螞蟻上樹, 但覺得個食譜個材料唔多豐富喎, 咪自己改良囉, 點知炒完出嚟, 嘩, 成座山咁呀

粉絲我用左2紮呀, 過多呀,

啲汁好快就比佢地索晒, 所以大家落1紮好啦, 唔好落太多, 如果大家啲粉絲索水力強的話, 個汁不況煮多啲

一定要試好味先, 唔怕辣, 仲可以加啲辣椒油, 調好味, 加入米粉, 一攪勻, 上晒色就好熄火, 唔好再煮, 米粉煮得太腍就好難食啦

仲有, 個汁整杰少少好啦, 太杰咁啲粉絲就會互相糾纏, 變相就唔好味啦, 要小心呀, 生粉水逐少逐少加, 杰杰地就好收手, 唔需要用晒呀

材料 Ingredients

1- 碎豬肉1磅左右 (1 lbs of minced pork)

2- 中洋蔥1個, 去衣, 切粒 (1 medium onion, diced)

3- 雜豆1杯 (1 cup of assorted vegetable)

4- 蒜茸1湯匙 ( 1 tbsp of minced garlic)

5- 黑欖菜2湯匙, 非必要 ( 2 tbsp of shredded black olive)

6- 粉絲1小紮, 浸軟 (2 small vermicelli, soaked around 60g )

汁料 Sauce
份量只供參考 (just for reference only)

1- 濃縮雞湯1/2罐 (1/2 cane of chicken broth)

2- 生抽1湯匙 (1 tbsp of soya)

3- 水1 杯 (1 cup of water)

4- 生粉水3湯匙 (3 tbsp of corn starch mixture)

5- 老抽2湯匙 (2 tbsp of black soya) 
做法 Steps

1- 先將豬肉用基本野醃20分鐘備用,  快火起鑊, 將豬肉炒熟(圖1), 隔油備用

2- 快火落油(約1湯匙)起鑊, 先爆香蒜茸,  加洋蔥和1茶匙鹽炒至軟身, 再加入雜豆炒至乾身(圖2), 加入碎肉(圖3)和汁料(除生粉水)兜勻煮滾, 調好味, 逐少加入生粉水攪勻至微微杰身, 放入粉絲(圖4)和黑欖菜兜勻, 上碟即可

1- Marinade the pork with basic seasoning for 20 minutes.  Heat the pan over high heat and stir fry the pork until well done (fig.1).  Drain it well and put it aside

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic until fragrant.  Stir in the onion with 1 tsp of salt until soft.  Stir in assorted vegetable and stir fry it until dry (fig.2).  Stir in the pork (fig.3) and sauce mix (except the corn starch mixture), and heat through.  Stir in bit by bit of corn starch mixture until the sauce is a bit thickened.  Stir in the vermicelli (fig.4) and black olive, and mix them well.  Dish it up and serve it in hot.

1- 汁料不宜過杰, 否則加粉絲後口感會很差

1- Don't over thicken the sauce, otherwise, vermicelli will be so sticky.
