食譜: 蜜梅京燒骨 (Spare ribs in special Plum sauce)

新年假期大家過的開心嘛, 有咩節目呀? 係唔係好忙去派(逗)利是呀? 我就知係同家人吃過飯, 無咩搞其他野啦, 哈哈

我哩邊當然無新年假喇, 基本上仲好忙呀, 返工有project要趕, 又要讀書準備考牌,

哩個食譜係我改自李x記提供嘅食譜, 佢地要用成半樽蘇梅醬, 我當然唔會啦,

而排骨, 要整得熟, 好多人都會用中火炸, 咁做雖然香口, 快捷,

但未免用得太多油, 油煙又多, 又熱氣, 所以我改用先煎而後炆嘅方法

係香港嘅朋友用開煤氣爐的話, 記得改用中大火而唔好用大火去炆, 因為你o地火力比較強

哩個方法當然用多好多時間啦, 不過無咁熱氣, 油同煙都減少,

Prep 準備: 20 minutes |  Cook烹調: 35 minutes |  For 份量: 4 people 

材料 Ingredients

1- 肉排1磅左右, 切長條 (1 lbs spare ribs, cut into long sections)

2- 熟芝麻1湯匙  (1 tbsp of fried sesame seeds)

醃料 Seasoning
份量只供參考 (just for reference only)

1- 柱侯醬2湯匙 (2 tbsp of Chu hou paste)

2- 磨豉醬2湯匙 (2 tbsp of crushed yellow bean paste)

3- 糖1/2茶匙 (1/2 tsp of sugar)

4- 生粉2湯匙 (2 tbsp of corn starch)

5- 油2茶匙 (2 tsp of oil)

6- 水3湯匙 (3 tbsp of water)
  

汁料 Sauce

蘇梅醬3湯匙 (3 tbsp of Plum sauce)

2- 鎮江香醋1/2茶匙 (1/2 tsp of Chinkiang Vinegar)

3- 蜜糖1湯匙 (1 tbsp of honey)

4- 水1湯匙 (1 tbsp of water)

5- 生抽1湯匙 (1 tbsp of soya sauce)
 

做法 Steps

1- 先將排骨用醃料醃20分鐘備用, 汁料攪勻調好味道備用

2- 快火落油(約2湯匙)起鑊, 放入排骨炒至外面微焦(圖1), 加入1杯水, 蓋頂快火炆30分鐘(注意乾水), 倒去肉汁, 熄火加入汁料兜勻(圖2),  上碟灑上芝麻
即成

1- Marinade the spare ribs the seasoning for 20 minutes.  Mix the sauce mix and adjust the taste accordingly.  Put it aside

2- Heat the pan with 2 tbsp of oil over high heat.  Stir fry the ribs until brown (fig.1).  Add 1 cup of water and heat through.  Simmer it with closed lid over high heat for 30 minutes (be aware the water dried out) .  Drain the water and turn off the heat.  Stir in the sauce mix and mix it well (fig.3).  Dish it up and top with the sesame seed.  Serve it in hot.

食譜: 薯仔炆雞翼 (Simmered chicken wings with potato)

就嚟新年啦, 我諗我哩個食譜係新年前最後一個食譜啦, 下一個就要等新年後先出啦, 我記得上年我一連四日都出啲同賀年有關嘅菜名, 哈哈, 不過今時唔同往日啦, 我真係無咩時間

今日出哩個, 無理你無食過呀, 哩個餸可以話大家細路都一定鐘意食

材料同調味都係超簡單,

毫無花巧但就非常之好味道呀

薯仔去完皮會變色,

所以記得要浸凍水, 我好憎啲薯仔嗎炆完就溶晒無得食, 所以通常我炆前都會先炒一炒, 炒完炆時就唔會咁易溶呀

雞翼有好多人唔會煎就咁炆, 但我覺得煎香外表先炆會好好多, 一來個皮好味啲, 二來煎封完, 肉汁唔會流失,

醃料 Seasoning

1- 蠔油2湯匙 (2 tbsp of oyster sauce)

2- 老抽2湯匙 (2 tbsp of black soya)

3- 糖1/2茶匙 (1/2 tsp of sugar)

4- 生粉2湯匙 (2 tbsp of corn starch)

老抽1湯匙 (1 tbsp of black soya)

2- 生抽1/2湯匙 (1/2 tbsp of soya sauce)
 

做法 Steps

1- 先將雞翼用醃料醃15分鐘備用, 薯仔切好浸水備用,  快火落油(約1湯匙)起鑊, 炒雞翼至外表變色, 盛起備用

2- 快火落油(約1湯匙)起鑊, 薯仔隔好水放入炒至微黃(圖1), 轉中火, 加入雞翼(圖2)和水至蓋過材料, 蓋頂炆30分鐘, 再加入汁料調味
即成

1- Marinade the chicken wings the seasoning for 15 minutes.  Soak the potato after cut.  Heat the pan with 1 tbsp of oil over high heat.  Stir fry wings until both sides turn brown.  Dish it up and put it aside

2- Heat the pan with 1 tbsp of oil over high heat.  Drain well the potato and stir fry it until light brown.  Turn the heat to medium.  Add the chicken wings on top of the potato.  Add water to cover the ingredient and heat through.  Simmer it for 30 minutes with closed lid.  Stir in the sauce mix and adjust the taste accordingly.  Serve it in hot.

食譜: 豉蒸三文 (Steam salmon in black bean garlic sauce)

就嚟新年啦, 大家有咩搞作呀? 我就無咩特別野會搞啦, 最多都係出去食吓飯, 同屋企人團聚一吓咁啦

今年好忙, 本來諗過整過年食品,

我諗都係無咩時間整啦, 所以都係放棄著先啦, 有時間都休息吓好過呀

今日哩個豉蒸三文真係嘅簡單又惹味,

不過可能會好濃味呀, 如果大家食開清淡的話, 就不妨將汁料改少啲呀

蒸三文一定唔可以過熟, 一旦過熟就會開始老, 同好乾身, 咁就唔好味啦, 我自己蒸左5-6分鐘左右就啱啱好, 食時真係滑一滑呀

不過唔同厚度要用唔同時間, 大家要執生呀, 開頭煮時可能會過熟或唔熟, 但煮過一兩次就會慣啦

2- 老抽1湯匙 (1 tbsp of black soya)

3- 蒜蓉1湯匙 (1 tbsp of minced garlic)

4- 酒1湯匙 (1 tbsp of cooking wine)

5- 油1湯匙 (1 tbsp of oil)

6- 生抽1/2湯匙 (1/2 tbsp of soya sauce)

做法 Steps

1- 先將三文魚柳完全抹乾, 再用少許胡椒粉醃10分鐘備用, 汁料攪勻備用 (圖1)

2- 三文魚柳平均塗上醬汁, 大火蓋頂蒸6分鐘
即成

1- Marinade the salmon with some pepper for 10 minutes.  Mix all the sauce mix and put it aside

2- Top the sauce mix on the top of the salmon.  Steam it over high heat with closed lid. Serve it in hot.

1- 各人買的三文魚柳厚度不一, 6分鐘只是我用的時間, 請自行加減
