食譜: 香茅茄香豬扒 (Pan fry pork chop with lemon grass and tomato)

天氣真係好熱呀, 終於連續幾日都有成30度, 好有夏天feel, 當然係公司有冷氣唔覺得有咩問題, 但一出到街又熱又濕, 都真係幾焗呀, 但咁先叫夏天嘛

哩幾排我無咩時間出食譜,

今日又出豬扒, 豬扒真係我強項之一呀, 我諗大大話話都出左20多個豬扒食譜呀, 哈哈哈,

等我有時間的話, 搵吓出版商, 整本豬扒大攻略都好喎, 哈哈

香茅新鮮買返嚟, 我通常都會先用刀背啄吓, 拍吓, 咁就會好易散開,

最外那一塊, 我通常都唔會要, 我淨係入面比較嫩個一部份, 白色尾部都唔要, 因為太硬, 揀好就切先幼粒, 就好用啦

如果買唔到, 可以買現成啲香茅醬或香茅碎, 只係香味就無咁濃郁啦, 都可以用嘅

材料 Ingredients

1- 無骨豬扒6塊 (6 boneless pork chop)

2- 蒜蓉1湯匙 (1 tbsp chopped garlic)

3- 香茅1條, 略拍, 切粒 (1 lemongrass, diced)

4- 青椒1個, 切粒 (1 green pepper, diced)

5- 中洋蔥1個, 切粒, (1 medium onion, diced)

6- 蕃茄1個, 切粒 ( 1 tomato, diced)

汁料 Sauce
份量只供參考 (just for reference only)

1- 魚露1茶匙 (1 tbsp of fish sauce)

2- 水2湯匙 (2 tbsp of water)

3- 糖1/2茶匙 (1/2 tsp of sugar)

做法 Steps

1- 先將豬扒用刀背井字型兩面拍鬆, 再用基本野醃15分鐘,  快火起鑊, 將豬扒煎熟(圖1), 隔油備用

2- 快火落油(約1/2湯匙)起鑊, 先爆香蒜茸, 香茅, 落洋蔥和1/3茶匙鹽炒至軟身(圖2), 再加入青椒和蕃茄炒勻(圖3), 再加入汁料煮滾(圖4), 加入豬扒兜勻, 上碟即成

1- Beat the pork chop evenly on each surface twice to soften the pork chop.  Marinade the pork chop with basic seasoning for 15 minutes.  Heat the pan over high heat and stir fry the pork chop until well done (fig.1).  Drain it well and put it aside

2- Heat the pan with some oil over high heat (at least 1/2 tbsp of oil).  Stir fry the garlic and lemon grass until fragrant.  Stir in the onion with 1/3 tsp of salt until soft (fig.2).  Stir in green pepper and tomato, and mix it well (fig.3).  Stir in the sauce mix and heat through (fig.4).  Stir in the pork chop.  Dish it up and serve it hot

    其實菜色就比較少用

    係你既煮食blog徘徊左一段時間,有時諗煮乜餸真係諗到頭痛,所以,我會四圍搜尋好多高手既烹飪菜式,早前都按你的食譜煮左幾樣小菜啦!
    豬扒既煮法有時真係變化多端,而且又可以配搭好多食材,我間唔中都會用新鮮香茅整豬扒,因為新鮮香茅會散發一陣清香既檸檬味
