上個星期有個朋友結婚, 我同太太都要去飲, 個會場係一個科學展覽中心入面一個展覽廳, 地方真係夠晒大呀, 真係唔錯

我之後9月要幫手影結婚相, 所以都趁哩個機會試吓影相, 同埋學吓用閃光燈呀,

其實唔落唔係唔得,

但真係會無左個神髓呀, 即係咁, 你煮台式嘅三杯雞, 唔落酒得唔得呀? 你話啦, 唔落就唔係三杯雞啦

不過咁, 你真係唔想落,

可以用"堤"子汁代替, 不過!!! 果汁會偏甜好多, 所以糖可以完全唔需要落呀

雞肉我會先煎封, 唔需要煎熟佢喎, 只需要外面煎到靚一靚, 之後炆15分鐘就可以啦, 咁做確保肉質嫩滑呀, 但要小心呀,

如果炆太耐, 肉就會變老又鞋呀

紅酒煮過就已經無酒精, 但味道會偏酸, 頂唔順的話,

材料 Ingredients

1- 雞柳1磅左右, 切件 (1 lbs chicken filet, cut into pieces)

2- 中型洋蔥1個, 去衣切件 (1 medium onion, peeled, cut into pieces)

3- 車里茄10粒 (10 grape tomato)

4- 蒜蓉1湯匙 (1 tbsp of minced garlic)

5- 青椒半個, 切件 (1/2 green pepper, cut into pieces) 
醃料 Seasoning
份量只供參考 (just for reference only)

1- 糖1/2湯匙 (1/2 tbsp of sugar)

2- 鹽1/2湯匙 (1/2 tbsp of salt)

3- 水1 湯匙 (1 tbsp of water)

4- 黑椒1/2湯匙 (1/2 tbsp of black pepper)

5- 生粉1/2湯匙 (1 tbsp of corn starch)

汁料 Sauce
份量只供參考 (just for reference only)

1- 1/3杯紅酒 (1/3 cup of red wine)

2- 1/4杯 balsamic vinegar (1/4 cup of balsamic vinegar)

3- 水1/3杯 (1/3 cup of water)

4- 茄汁3湯匙 (3 tbsp of ketchup)

5- 糖4湯匙 (4 tbsp of sugar)

做法 Steps

1- 將雞肉連同醃料醃10分鐘, 快火落油(約1湯匙)起鑊, 先將雞肉炒至外表金黃(圖1), 盛起隔水備用

2- 快火落油(約1湯匙)起鑊, 先落蒜茸炒至金黃, 加入洋蔥連1/3茶匙鹽炒至軟身(圖2), 再加入雞肉和青椒兜勻, 加入汁料煮滾(圖3), 蓋頂中火炆15分鐘, 再加車里茄兜勻(圖4), 上碟即成

1- Marinade the chicken with seasoning for 10 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the chicken until brown (fig.1).  Put it aside and drain it well.

2- Heat the pan with 1 tbsp of oil over high heat.  Stir fry garlic is golden and fragrant.  Stir fry the onion with 1/3 tsp of salt until soft (fig.2).   Stir in the chicken and green pepper, and mix it well.  Stir in sauce mix and heat it through (fig.3).  Cover and simmer for 15 minutes.  Stir in tomato mix it well (fig.4). Dish it up and serve it hot

貼士 Tips
1- 雞肉先煎封後炆可以確保肉質嫩滑, 但也不能炆過耐, 否則就會老

1- Brown the chicken before simmer could make the chicken soft and juicy.  If you simmer the chicken too long, it will make it dry and hard

2- Add some corn starch mixture to thicken the sauce if necessary.

3- Grape tomato can eat without cook.  So you don't need to simmer it.

    1.  balsamic vinegar - 是什麼東東呢 ?  是否普通的醋呢 ?
    2.  可否不用車厘茄, 因我們都不吃的, 不下可以嗎 ?
