自創食譜: 西汁豬扒 (Pan fry pork chop in special sauce)

大家有無發現我個blog 有少少唔同左呢? 無錯, 就係頂部多左個video, 我覺得拍video好過寫食譜, 因為容易好多去解釋呀

不過拍片比影相麻煩,

1- 無骨豬扒1磅左右 (1 lbs of boneless pork chop)

2- 中型洋蔥半個, 去衣切絲 (1/2 medium onion, sliced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 雜豆1杯 (1 cup of assorted vegetable)

5- 罐頭磨菇1罐(400克) (1 cane of mushroom (400g))

汁料 Sauce
份量只供參考 (just for reference only)

1- 熱水1/4杯(50ml) (50ml of hot water)

2- 牛油2湯匙 (2 tbsp of butter sauce)

3- 雞湯50ml(1/4杯) (50 ml of chicken broth)

3- 茄汁2湯匙 (2 tbsp of ketchup)

做法 Steps

1- 豬扒兩面平均拍鬆, 再用醃料醃15分鐘, 快火落油(約1湯匙)起鑊, 先將豬扒煎至兩面金黃, 加入50ml熱水, 蓋頂大火焗3分鐘或至全熟, 盛起隔油備用(圖1)

2- 快火落1湯匙油, 快火起鑊, 先爆香蒜茸, 再加入洋蔥和1/3茶匙鹽炒至軟身(圖2), 再加入雜豆,磨菇勻炒香(圖3), 再加入豬扒和汁料兜勻, 蓋頂煮滾焗1分鐘(圖4), 上碟即成

1- Beating both side of the pork chop evenly.  Marinade with the basic seasoning for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Pan-Fry the pork chop until both side turn brown.  Add 50ml hot water.  Cover and simmer for 3 minutes over high heat or until done.  Put it aside. (fig.1)

2-  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the garlic until fragrant.  Stir-fry the onion with 1/3 tsp of salt until soft (fig.2).  Stir in the assorted vegetable and mushroom (fig.3).  Mix it well and heat through.  Stir in the pork chop and sauce mix and mix it well.  Cover and simmer over high heat for 1 minute (fig.4). Dish it up and serve it in hot.

貼士 Tips
1- 汁料如果嫌不夠多, 可以加倍個份量, 茄汁份量隨自己喜好去改變, 喜歡酸一點的, 不妨加多些

1- If you want more sauce, you can double the portion of the sauce mix.  If you want more sour, you can add more ketchup.
