食譜: 通少節瓜湯 (special Hairy cucumber soup)

新年往往都好多雪, 今年都唔例外, 我放假期間有日啲雪堆到去我條腰咁高呀, 搞我差啲出到門口呀, 哈哈

1- 豬柳1磅左右, 切絲 (1 lbs of tenderloin pork, sliced)

2- 薑2片  (2 slices of ginger)

3- 節瓜350克, 去囊去皮, 切片 (350g of hairy cucumber, seed removed, peeled, sliced)

4- 蝦米1/4杯, 浸軟 (1/4 cup of dried shrimps, soaked)

5- 粉絲80克, 浸軟, 切半(80 g of vermicelli, soaked, cut into half)

6- 清雞湯1罐 (1 cane of chicken broth)

7- 水3杯,650ml 左右 (650 ml of water)

做法 Steps

1- 先將豬肉用基本野醃15分鐘備用, 同時將雞湯, 水連同薑片煲滾(圖1), 加入節瓜, 蝦米蓋頂中火煲15分鐘(圖2)

2- 快火落1湯匙油, 下豬肉炒至全熟(圖3), 盛起隔好汁料, 將豬肉和粉絲加入湯中(圖4), 改大火, 蓋頂煮2-3分鐘即成

1- Marinade the pork with basic seasoning for 15 minutes.  Meanwhile, boil the chicken broth, water along with the ginger slices (fig.1).  Add in the hairy cucumber and dried shrimps.  Cover and simmer over medium heat for 15 minutes (fig.2)

2-  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the pork until done (fig.3).  Drain it well.  Stir in the pork and vermicelli into the soup (fig.4).  Cover and simmer over high heat for 2-3 minutes.  Serve it in hot.

貼士 Tips
1- 其實豬肉唔炒就咁放湯都得, 不過炒過一來香口啲, 二來將湯味道加濃, 三來炒完隔好油的話, 會無咁肥膩

2- 節瓜要吃爽口的話, 可以在放豬肉前3分鐘才下湯

1- It is optional to stir fry the pork before adding into the soup.  However, it will taste better if you stir fried it before.  It also add more flavor to the soup.

2- To keep the hairy cucumber crispy, you can add it into the soup 3 minutes before adding the pork.

    正呀, 個湯一定好甜呢, 不過h7最鍾意都係裡面d粉絲, 吸晒d精華一定好好味呀

  2. 日日打邊爐就一定熱氣 o架了,差啲會噴火咁濟添呀! 惟有狂飲水囉,鍾意就冇計 o架了!

  13. 通少,你唔用blogger喇?我之前都係係blogger留言,但你唔用,咁我就開個yahoo黎玩啦!請問你住加拿大邊度呀?咁多雪係唔係ottawa果頭呀? 多倫多依面真係唔多雪。得個凍字。係北面就比較多少少.

  14. 通少..想問下點解我次次用粉絲煮野的時候都失敗,我試過用嚟炒CABBAGE,又用嚟沙嗲牛肉煲...但點解我唔係整到佢腍晒,攪到煲野好似一"PAT""PAT"...仲有炒時就堆埋一舊? 而唔係好似人地咁一條條?? 我有用水浸左先煮架喎!!! 麻煩你~
