自創食譜: 豬骨土豆湯 (Spicy spare ribs with potato soup)

話說有次我和太太去去多倫多旅行, 太太朋友iris 介紹我們去一間叫貓頭鷹的韓國餐廳吃午餐, 當時就點了豬骨土豆湯,

真是平宜又好味道呀, 太太試過這個菜, 就愛上了, 好多時去到多倫多, 都要去貓頭鷹叫豬骨土豆湯

既然太太喜歡, 回到家,

我就一於試試做, 其實材料簡單, 不太難做的, 如果大家想再講究一點的話, 不要用排骨, 直接用豬骨去煲仲好, 我用排骨因為喜歡多肉一點,

土豆其實就是薯仔, 豬骨加薯仔, 炆出來, 當然又香又甜啦,

用排骨味道就會沒有這麼濃, 所以要加點雞湯幫幫手, 如果大家喜歡, 用來送烏冬可以話一流呀

大家實會問我, 咩係韓國辣椒醬, 用中國辣椒醬代替可不可?

老實講, 最好唔好啦, 韓國辣椒醬入面加入了其他配料, 味道辣而帶香甜, 如果真的買不到, 可以用"是拉差"辣椒醬加點海鮮醬混合, 但當然無咁好味啦

1- 腩排1磅半左右, 切件 (1+1/2 lbs of pork ribs, cut into pieces)

2- 中型洋蔥半個, 去衣切絲 (1/2 medium onion, sliced)

3- 蔥2條, 去白, 切段 (2 green onion, stemmed off, cut into section)

4- 蒜蓉1湯匙 (1 tbsp minced garlic)

韓國泡菜400克 (400g of Korean kimchi)

6- 白肉薯仔350克, 去皮 (350g of potato, peeled, cut into pieces)

汁料 Sauce
份量只供參考 (just for reference only)

1- 濃縮雞湯1/2罐 (1/2 cane of chicken broth)

水1罐 (1 cane of water)

3- 白麵豉2湯匙 (2 tbsp of white miso sauce)

4- 韓國辣椒醬2湯匙 (2 tbsp of korean chili sauce)


做法 Steps
 

1- 先將排骨用大火飛水5分鐘 (圖1), 沖凍水洗淨, 盛起備用

快火落油(約1湯匙)起鑊, 先落蒜茸炒至金黃, 加入洋蔥, 和1/3茶匙鹽炒至軟身 (圖2), 再加泡菜炒香(圖3), 再加入排骨兜勻(圖4), 再加入雞糖和水兜勻煮滾(圖5), 再加入薯仔(圖6), 煲滾後, 轉慢火蓋定炆40分鐘, 加入麵豉和辣椒醬調好味即成

1- Blanch the pork rib in boiling water for 5 minutes.  Rinse it under the cold water and clean it well (fig.1).  Put it aside.

2-  Heat the pan with 1 tbsp of oil over high heat.  Stir fry garlic is golden and fragrant.  Stir in the onion and green onion with 1/3 tsp of salt until soft (fig.2).   Stir in the Kimichi, and mix it well (fig.3).  Stir in the pork (fig.4).  Add in the chicken broth and water.  Bring it to boil (fig.5).  Add in the potato (fig.6).  Turn the heat to low. Cover and simmer for 40 minute.  Add in the miso and chili sauce.  Serve it in hot.

貼士 Tips
1-
炆排骨時, 記得要檢查是否夠水, 如果不夠就要加入熱水補充, 盡量要保持水位可以蓋過一半排骨為佳

1- When simmering the ribs, check the water to see if it is enough.  If not, add in the hot water.  Try to keep the water until it is enough to cover half of the ingredients..

2- Add the miso and chili sauce at the end only.  Do not add all in one shot.  Add some and try it.  Adjust the taste accordingly.
