夏天餸系列: 香爆豬仔脆香瓜

1- 豬柳400克左右, 切粒 (400g of tenderloin pork, diced)

2- 水1/4杯 (1/4 cup of water)

匙 (1/3 tsp of sugar)

4- 蠔油2茶匙 (2 tsp of oyster sauce)

做法 Steps
1- 先將豬肉用通少中式醃肉法 醃15分鐘, 快火落油1湯匙起鑊, 再將豬肉熟(圖1), 盛起隔油備用

2- 將鑊洗好抹乾,
快火落約1/2湯匙油起鑊, 先將蒜頭爆香, 再加入洋蔥和1/3茶匙鹽和炒至軟身(圖2), 再加入翠玉瓜炒3分鐘(圖3), 加入豬肉和汁料兜勻煮滾(圖4), 蓋頂中火焗3分鐘, 上碟即成

1- Marinade the pork with Tony's marinade method for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the beef until done (Fig.1).  Drain it well and put it aside.
tonytsang and kareny recipy2- Clean the pan and dry it well. Heat the pan with some oil over high heat with least 1/2 tbsp of oil. Stir-fry the onion with 1 tsp of salt until soft (Fig.2). Stir in the zucchini.  Stir fry it for 3 minutes (fig.3).  Stir in pork and sauce mix (fig.4).  Mix it well and heat it through.  Cover and simmer it for 3 minutes over medium heat.  Dish it up and serve it in hot.

貼士 Tips
1-
翠玉瓜如果切得太大件, 會比較難腍身, 所以最好先試一下, 如果仍然太硬, 加2-3湯匙熱水再蓋頂焗多2-4分鐘左右

汁料比較鹹, 如果不喜歡太鹹的話, 請減輕醃肉用的調味料份量

1- It will hard to make the zucchini soft if you cut it into large pieces.  Taste it at the end to ensure if it is soft enough for you.  If not, please add 2-3 tbsp of hot water and simmer it for 2-4 minutes..

2- Reduce the portion of marinade seasoning if you don't want it too salty.
