[自創食譜]: 香滑粟芋雞柳 (Stir-fried chicken & potato/taro with sweet corn cream)



[自創食譜]香滑粟芋雞柳

1- 無皮雞扒450克, 切絲 (450g of boneless chicken fillet, shredded)

2- 薯仔200克, 去皮切粒 (200g of potato, cut into pieces)

芋頭200克, 去皮切粒 (200g of taro, cut into pieces)

急凍粟米粒1/2杯, 非必要 (1/2 frozen corns kernels, optional)

調味料 Seasoning

1- 牛油1湯匙 (1 tbsp of butter
)

2- 罐頭忌廉粟米1罐 (1 cane of Sweet corn cream style)

3- 熱水1杯 (1 cup of hot water)

4- 糖1/2茶匙 (1/2 tsp of sugar)

做法 Steps

1- 雞肉先用通少中式醃肉法醃15分鐘, 快火落油(約1/2湯匙)起鑊, 將雞肉炒熟, 盛起備用 (圖1)

將鑊洗好抹乾, 快火落約1/2茶匙油起鑊, 加入薯仔芋頭炒3分鐘(圖2), 再加熱水, 改用中火, 蓋頂炆20分鐘或至腍為止(*注意水乾), 轉大火, 再加回雞肉, 急凍粟米粒和汁料煮滾(圖3), 兜勻上碟即成

1- Marinade the chicken with Tony's marinade method for 15 minutes.  Heat the pan with 1/2 tbsp of oil over high heat.  Stir fry the chicken until done.  Put it aside (fig.1).

Clean the pan and dry it well. Heat the pan with 1/2 tsp oil over high heat. Stir-fry the potato and taro for about 3 minutes (fig.2). Add in the hot water.  Cover and simmer over medium heat for 20 minutes or until soft (*be aware the water dried out).  Turn the heat back to high.  Stir in the chicken, corn kernels, and the sauce mix and heat through (fig.3).  Dish it up and serve it in hot.
貼士 Tips

1- 當炆完薯仔時, 請留意水位是否夠1/2量杯份量, 大多, 則開大火讓水蒸法, 太少則加入熱水補充, 如果想香滑一點, 更好炆完薯仔芋頭時, 倒去水, 換入1/2杯花奶(淡奶)

2- 雞肉其實第一次煮時不用全熟的, 煮到8成左右, 切開入面還有微微粉紅就可以了, 之後再和汁一煮就會熟透的

1- Check the remain water after simmering the taro and potato.  If it is over than 1/2 cup of water, let it evaporate over high heat.  If it is not enough, then add some hot water.  To make the sauce smooth, you can replace the water with evaporated milk.

2- Do not overcook the chicken at the beginning.  Just make it 80% done is enough.  It will be completed cooked once you simmer it with the sauce mix.
