通少好介紹: 小甜茄愛牛魔皇 (Beef with double tomato)

很高興,
於海外都可以接受到香港太陽報的訪問, 請問有無人見過呀, 昨日星期四刊登的, 我網上看的只有很短的一段, 有人看過就話我知啦

以食材來說, 牛肉我真的用的很多,
不知道是我好彩還是真的處理得好, 我很少煮牛肉都會出現問題的, 牛肉有三點要好好認真處理的,
一是肉要肥少少, 切勿太瘦, 否則不如唔好吃, 二來要用糖來醃, 切勿加鹽, 鹽要加的話都是煮前先加, 牛肉用鹽醃過, 真的硬過石頭, 三要切得好, 切勿順紋切割,  不明白的話, 就記得去我貼士那部份, 看看詳細解釋

牛肉煮得好, 加入蕃茄, 味道當然非常好啦, 我再加入車厘茄, 吃時車厘茄的汁在口水爆開,

材料 Ingredients
1- 牛柳400克左右, 切片 (400g of beef fillet, sliced)

2- 蒜蓉2湯匙 (2 tbsp minced garlic)

3- 車厘茄15-20粒 (15 cherry tomato)

4- 中洋蔥半個, 去皮切件 (1 medium onion, peeled, cut into pieces)

5- 青椒1個, 去核, 切件 (1 green pepper, seeded, cut into pieces)

6- 中蕃茄2個, 切件 (2 beef tomato, cut into pieces)

汁料 Sauce
份量只供參考 (just for reference only)

1- 罐頭蕃茄湯1罐 (1 cane of tomato soup)

2- 熱水1/2量杯 (1/2 cup of hot water)

做法 Steps


1- 牛肉用通少中式醃肉法(但不要加鹽)醃15分鐘, 易潔鑊用快火落1湯起鑊, 將牛肉炒至7成熟, 盛起隔汁備用(圖1)

2-易潔鑊洗淨抹乾, 用快火落1/2湯匙油起鑊, 加入蒜蓉, 洋蔥和1/3茶匙鹽炒至洋蔥軟身, 加入蕃茄和1/3茶匙糖炒2-3分鐘(圖2), 再加入青椒炒1-2分鐘, 先加入熱水,蓋頂煮2-3分鐘 (圖3), 再加入蕃茄湯至汁杰 (圖4), 加入牛肉和車厘茄兜勻煮透, 上碟即成

1- Marinade the beef with Tony's Chinese marinade method (except salt) for 15 minutes.  Heat the non-sticky pan with 1 tbsp of oil over high heat.  Stir fry the beef until 70% done.  Drain the beef well by using a sieve and put it aside (fig.1).

2- Clean the non-sticky pan and dry it well.  Heat the non-sticky pan with 1/2 tbsp over high heat again.  Stir in the garlic, and onion with 1/3 tsp of salt until the onion is soft.  Stir in the tomato with 1/3 tsp of sugar.  Continue to stir fry the ingredient for 2-3 minutes (fig.3).  Add in the green pepper and mix it well.  Continue to stir fry the ingredient for 1-2 minutes.  Then add in the hot water (fig.3).  Cover and simmer for 2-3 minutes.  Stir in the tomato soup paste until the sauce is thicken (fig.4).  Stir in the beef and cherry tomato.  Mix it well and heat it through.  Dish it up and serve it in hot.

貼士 Tips
1- 沒有蕃茄湯可以用茄膏, 但要加糖因為茄膏很酸的, 不想加蕃茄湯或茄膏也是可以的, 但要用多2個蕃茄, 同時要改用中火去炆10-15分鐘才能有類似的味道

2- 蕃茄湯帶甜, 車厘茄帶酸, 兩者互補, 味道才得平均, 車厘茄不宜過早加入, 很容易煮爛

1- You can replace the tomato soup paste with pure tomato paste.  Remember to add more sugar as tomato paste is sour normally.  If you want nature tomato without adding any paste, you can add 2 more tomato.  Simmer it over medium heat for 10-15 minutes .

2- Tomato soup is sweet and cherry tomato is sour.  They balance out the favor.  Do not overcook the cherry tomato or it will be melted into the sauce

    唔係所有車厘茄都响口入邊爆開呢,要咁啱買到好嘅先得呀。
