[自創食譜]蔥香辣牛肉 (Stir-fry beef with green onion and black pepper)

日本的大地震真的很令我不安, 每天電視都看到新的影片, 新的消息, 始終都覺得, 無論你怎樣努力去準備,
天災真的是避不了, 很恐怖

日本人在災難中仍然很有秩序, 很有禮貌, 排隊的不會打尖, 店舖不會趁火打劫去加價, 反而幫忙派糧派水, 大家都互相幫助,
這種精神和態度, 真的很值得我們去學習呢

今日出哩個餸, 如果你有傷風的話, 吃完應該會覺得精神和很溫暖, 雖然我沒有科學的根據, 但我相信大部份採用的材料, 都
有去寒暖身的作用的, 哈哈,

材料 Ingredients
1- 牛柳400克左右, 切絲 (400g of beef fillet, sliced)

2- 5條左右, 去蒂, 切段 (4 green onion, stemmed off, sectioned)

3- 中型洋蔥1個, 去皮, 切 ( 1 medium onion, peeled, shredded)

粟米仔6條左右, 切 (6 baby corn, cut into half pieces)

5- 蒜蓉2湯匙 (2 tbsp minced garlic)

6- 黑胡椒粉2湯匙 (2 tbsp of black pepper flake)

汁料 Sauce
份量只供參考 (just for reference only)
1- 老抽1 茶匙 (1 tsp of black soya sauce)

2- 砂糖1/3湯匙 (1/3 tbsp sugar)

3- 熱水1杯 (220 ml of hot water)

4- 雞粉1/2茶匙 (1/2 tsp of chicken powder)

5- 生粉2湯匙加2湯匙凍水, 伴勻 (2 tbsp corn starch mix with 2 tbsp of cold water)

做法 Steps


1- 牛肉用通少中式醃肉法(但不要加鹽)醃15分鐘, 易潔鑊用快火落1湯起鑊, 將牛肉炒至7成熟, 盛起隔汁備用(圖1)

2-易潔鑊洗淨抹乾, 用快火落油約1湯匙起鑊, 加入蒜蓉, 黑胡椒粉, 洋蔥連1/3茶匙鹽炒至洋蔥軟身, 再加入青蔥炒透(約2分鐘) (圖2), 加入汁料1-4和牛肉兜勻煮熱, 一面逐少加汁料5, 一面兜勻至汁料變杰, 上碟即成

1- Marinade the beef with Tony's Chinese marinade method (but do not add salt) for 15 minutes.  Heat the non-sticky pan with 1 tbsp of oil over high heat.  Stir fry the beef until 70% done.  Put it into a sieve and put it aside (fig.1)

2- Clean the non-sticky pan and dry it well.  Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic, black pepper, and onion with 1/3 tsp of salt until the onion is soft.  Stir in the green onion. Continue stir fry the ingredient to heat it through (for about 2 minutes) (fig.2).  Stir in the sauce mix 1-4 and the cooked beef.  Continue to stir fry all ingredients to heat it through.  Stir in the sauce mix 5 until the sauce is thicken enough.  Dish it up and serve it in hot.

貼士 Tips
1- 牛柳講了很多遍不可加入鹽去醃的, 因為鹽會令牛肉肉質變硬, 相反, 加多點糖和水就能令牛肉更滑嫩

2- 雖然是沒有科學根據, 但洋蔥, 蔥, 黑椒粉和蒜頭, 都有去寒作用, 對治療傷風感冒有一定效用

3- 黑椒越多會越辣, 如果受不到太辣, 可以減1湯匙

1- Do not marinade the beef with salt as it will make the texture harder to eat.  On the other hand, add more sugar and water will soften the beef

2- Onion, green onion, garlic and black pepper can warm up your bodyAlthough i don't have a scientific proof, It may have some impact to cure the cold
