[食譜推薦]白雲蘆筍配蝦球 (Shrimps with asparagus in creamy sauce)

上個星期去了多倫多幾天, 好好輕鬆一下
, 很高興在多倫多能和blog友stanley, vivian 和她的女兒相聚, 一起吹下水, 吃個午飯, vivian 的女兒cherry
真的很得意又乖, 而stanley這個多倫多食神仲帶了我出的倆口子住家菜食譜,
令我真的很高興呢, 哈哈

去多倫多就如香港的朋友去深圳一樣,
話近唔近, 話遠又唔算太遠, 主要去到都是吃吃吃和入下貨, 始終多倫多的貨品種類有很多, 我買了不少新工具, 將來會再和大家介紹一下, 哈哈

不過在多倫多的朋友, 你們真的很幸福呢, 食品又平又好味道, 種類又多, 選擇又多,
真的令我很羨慕呢

今次有好幾間餐店讓我有驚喜的, 很想和大家分享一下, 我去了一間人不太多的皇后餅店, 入面昏昏暗暗, 沒有甚麼伙計, 只
有一個很冷寞的收銀員, 不知是否我晚了點入去, 貨品淨下不多, 我只買了個很簡單的原味蛋卷, 想不味道十分之好, 它不太甜,
蛋卷香軟細膩, 質感一點也不粗糙, 入口即溶, 忌廉也不太多, 實在是上級之作, 價錢又平, 我在montreal 比多一倍價錢都吃不到呢

另一間是V2雲吞麵, 它絕不顯眼的, 舖面亦不大,
如果沒有stanley介紹, 我也沒有發現它的存在, 我入了去就點了最簡單的雲吞麵, 它做法傳統, 麵是放在湯匙上以防浸腍麵條,
麵條吃下去彈牙爽口絕對一讚, 湯底鮮甜也是不錯的, 而雲吞並非全統細少的做法, 那也沒有辦法, 始終是做生意的嘛, 但味道不錯, 蝦彈牙爽口, 雲吞還加了蝦子, 令味道更鮮, 如果能加多點青蔥和灑一點蝦子的話, 一定會更好味道, 賣相也會更吸引, 但以這個價錢,
絕對是值得推薦的

Prep 準備: 15 minutes | Cook 烹調: 15 minutes | For 份量: 4 people | Calories 熱量: 1050 (Estimated/ 估計)

材料 Ingredients
1- 中蝦400克左右, 去殼 (400g of shrimps, shell removed)

2- 洋蔥1個, 去衣切件 (11 onion, peeled, cut into pieces)

3- 蒜蓉 1湯匙 (1 tbsp chopped garlic)

4- 蘆筍300克, 切段 (300g of asparagus, sectioned)

5- 蟹柳300克, 切粒 (300g of imitated crab meat, diced)

汁料 Sauce
份量只 供參考 (just for reference only)

1- 磨菇忌廉湯1罐 (1 cane of cream of mushroom)

2- 熱水1罐 (1 cane of hot water)

3- 牛油1湯匙 (1 tbsp of butter)

4- 白酒3湯匙, 非必要 (3 tbsp of white wine, optional)
做法 Steps


1- 先將蝦用1/2茶匙鹽, 白胡椒粉和生粉醃15分鐘, 用易潔鑊, 快火落1/2湯匙油起鑊, 將蝦炒熟, 上碟備用(圖1), 另外蘆筍於滾水中飛水2-3分鐘, 隔好水備用

2-易潔鑊洗淨抹乾, 用快火落約1湯匙油起鑊, 落蒜頭炒至微黃, 加入洋蔥和1/3茶匙鹽炒至軟身(約2分鐘) (圖2), 再加入蘆筍炒透(約1分鐘)(圖3), 加入蟹柳和汁料, 輕手兜勻煮滾至杰身(圖4), 熄火, 加入熟炒勻, 上碟即可享用

1- Marinade the shrimps with 1/2 tsp of salt, white pepper and corn starch for 15 minutesHeat the non-sticky pan with 1/2 tbsp of oil over high heat.  Stir in the shrimps and stir fry it until done (fig.2).  Put it asideBlanch the asparagus in boiling water for 2-3 minutes.  Drain it well and put it aside

2- Clean the non-sticky pan and dry it well.  Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic until lightly brown.  Stir in the onion with 1/3 tsp of salt.  Stir-fry the onion until soft (about 2 minutes) (fig2).  Stir in the asparagus and heat it through (about 1 minutes) (fig.3).  Stir in the crab meats and mix it gently.  Add in the sauce mixture.  Heat it through until the sauce is thickened (fig.4).  Turn the heat off.  Add in the cooked shrimpsshirmps and mix it well.  Dish it up and serve it in hot.

貼士 Tips
1- 蘆筍最好買些幼身一點的, 低部白點較少為佳, 吃前如不怕浪費, 可以將低部10cm的地方切掉, 因為這個部位通常都是有很多的筋

2- 蝦肉當用鹽醃過, 就會抽去它一點的水份, 令它可以更加爽口, 用生粉去洗能令蝦更白, 更乾淨, 記得要去腸

3- 汁料中的熱水, 我用了牛奶代替, 味道會更香, 水的份量要視乎汁料杰度改變, 如果夠杰就不用再加, 相反就要加多一點

1- It is better to choose a thin asparagus where its root is still green.  If you like, you can cut off 10cm apart from the bottom.  This is the part where the asparagus is dried.

2- Marinade the shrimps with salt will make the shrimps' texture more firm.  Clean it with corn starch will bleach the shrimps.

3- I used the milk to replace the water in the sauce mixture.  The portion of water used is depend the thickness of the sauce.  Add more if it is too thick or add less if it is enough.
