[自創食譜]紹菜肉丸煲 (Meatballs with Chinese Cabbage)



通少好介紹: 紹菜肉丸煲 (Meatballs with Chinese Cabbage)

連續落了一個星期雨,
今個星期終於見到太陽伯伯了, 我好討厭下雨天, 陰陰沉沉, 每天心情都不是很好呢

今日哩個餸, 有點像獅子豆呢, 最大分別,
是我沒有用油炸肉丸, 我是先煎實肉丸表面, 再用雞湯炆熟的, 可以話比較健康的

我知道現在或許沒有紹菜買了, 大家可以用上海菜, 白菜等等比較硬身的中國菜去代替,
一樣好好味道的

這個煲做法簡單, 味道又好, 而且有肉有菜, 十分方便, 煲好飯晚餐就準備好了,

材料 Ingredients
1- 碎豬肉350克 (350g minced pork)

2- 洋蔥半個, 去衣切粒 (1/2 onion, peeled, chopped)

3- 青蔥粒3湯匙 (3 tbsp chopped green onion)

4- 粉絲250克, 浸軟 (250 g of vermicelli, soaked)

5- 罐頭馬蹄片100克, 切粒 (100g of water chestnut, chopped)

6- 薑片3塊 (3 slices of ginger)

7- 紹菜或白菜或上海菜300克, 切件 (300g of cabbage, cut into pieces)

汁料 Sauce mixture
份量只供參考 (just for reference only)

1- 清雞湯1罐 (1 cane of chicken broth)

1/2茶匙 (1/2 tsp of salt )

熱水250毫升 (250ml of hot water)

4- 生粉3湯匙 (3 tbsp of corn starch)

凍水5湯匙 (5 tbsp of cold water)
做法 Steps


1- 豬肉用通少中式醃肉法醃15分鐘, 再加入洋蔥粒, 青蔥粒, 馬蹄粒攪勻, 用手壓成大圓球, 易潔鑊快火落油約2湯匙再起鑊, 將豬肉丸煎至外表金黃, 再加1杯熱水, 蓋頂大火焗2分鐘, 放入砂鍋中央備用

2- 砂鍋加入薑片和汁料, 大火蓋頂煮滾, 轉中火, 蓋頂炆10分鐘, 再加入紹菜放在肉丸旁邊, 繼續用中火, 蓋頂炆5分鐘, 最後加入粉絲, 將粉絲用筷子推入肉丸下, 將肉丸托高, 生粉和凍水混合, 將生粉水逐少加入湯料中, 一面輕手攪拌至少許杰身, 即可享用

1- Marinade the minced pork with Tony's Chinese marinade method for 15 minutes.  Mix the onion, green onion, water chestnut with the marinade pork together.  Knead it into a large meatball by hand.  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the until brown.  Add 1 cup of hot water.  Cover and simmer for 5 minutes (fig.1).  Put the pork into the middle of the pot.

2- Add the ginger and the sauce mixture into the pot.  Bring the sauce to boil over high heat.  Turn the heat to medium.  Cover and simmer for 10 minutes.  Add the cabbage on the side the meatball.  Continue to simmer for 5 minutes.  Add the vermicelli and push it under the meatball.  Mix the corn starch with the cold water until dissolved.  Add in the corn starch mixture until the sauce is lightly thicken.  Dish it up and serve it in hot.

貼士 Tips
1- 肉丸不用完全煎熟的, 盡快煎至表面上色後, 加入熱水去焗它讓它定型, 這樣再炆它時就不會散開

2- 如果鍋太少, 菜很多的話, 可以預先將菜煮熟, 才加入煲內, 甚至推入肉丸下也可以, 而烹調時間亦要減短以免菜被煮得過腍

3- 汁料杰身程度要比平時煮汁時低, 感覺將吃湯羹一樣就可以了

1- Add the water when pan-frying the pork strengthen the pork.  The shape of the pork will able to hold while simmering.

2- If there is no space for cooking the cabbage, you can blanch the cabbage in advance.  Then push the cooked cabbage under the meatballs
