[自創食譜]韓式燒肉豆腐磚 (Korean BBQ pork with Tofu)



通少好介紹: 韓式燒肉豆腐磚 (Korean BBQ pork with Tofu)

五月過後每天都很熱,
今天天文台還發出了酷熱警告, 而寫blog時就行雷閃電, 看來, 夏天真的來了

今天出這個餸真的很有趣的,
用中國的叉燒加韓國的燒烤汁, 想不到味道非常之配合, 再加豆腐平衡了味道, 真的非常好味道

韓國燒烤汁可以於各大型超市都買到的,
就算真的買不到韓國貨, 用李錦記出的那種也是可以的

連煮連切都只需20分鐘, 不想夏天於廚房太耐的話,
這個餸絕對適合你, 記得試試啦

Prep 準備: 10 minutes | Cook 烹調: 10 minutes | For 份量: 4 people | Calories 熱量: 1350 (Estimated/ 估計)

材料 Ingredients
1- 叉燒400克左右, 切薄片 (400g of Chinese BBQ pork, thinly sliced)

2- 滑豆腐400克, 切成8塊 ( 400g of soft tofu, cut into 8 large pieces)

3- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into pieces)

4- 蒜蓉 1湯匙 (1 tbsp chopped garlic)

5- 本菇(鴻喜菇)400克, 去蒂弄散 (400g of Shimeji mushroom, stemmed off, separated)
汁料 Sauce mixture
份量只供參考 (just for reference only)

1- 韓國燒烤汁4湯匙 (4 tbsp of Korean barbecue sauce)

2- 熱水3湯匙 (3 tbsp of hot water)

3- 麻油1/2茶匙 (1/2 tsp of sesame oil)
做法 Steps


1- 豆腐排於碟上, 隔水蒸10分鐘或放入微波爐煮5分鐘, 輕手將碟內多餘的水份倒走備用(圖1)

2- 易潔鑊快火落1湯匙油起鑊, 落蒜蓉和洋蔥連1/3茶匙鹽炒至軟身, 再落本菇炒2分鐘(圖2), 加入叉燒快手兜勻(圖3), 再加入汁料兜勻煮滾熄火(圖4), 平均將炒好的材料舖在每一塊豆腐上即成

1- Put the tofu in a dish.  Steam it for 10 minutes or cook it in a microwave for 5 minutes.  Drain the water from the dish carefully.  Put it aside (fig.1).

2-  Heat the non-sticky pan with 1 tbsp of oil over high heat.  Add the garlic and onion with 1/3 tsp of salt.  Stir fry the ingredient until the onion is soft.  Add the mushroom and stir-fry for 2 minutes (fig.2).  Add in the BBQ pork and mix it well quickly (fig.3).  Add in the sauce mix and heat it through (fig.4).  Turn off the heat.  Top evenly the ingredient on the tofu.  Serve it in hot.

貼士 Tips
1- 舖材料上豆腐時不要太貪心, 剩下的材料可以另外盛起當作另一碟餸享用

2- 叉燒如果味道已經很鹹的, 可以將韓國燒烤汁減至2湯匙

3- 叉燒有糖份, 不宜煮太耐否則就會燶, 如果沒有信心, 加入叉燒前先改為中火

1- Do not over topping the ingredient on the tofu.  It is better keep the remaining ingredients and serve it as another dish.

2- If the pork is salty, you can reduce the BBQ sauce to 2 tbsp.

3- The BBQ pork coated with sugar.  It is easy to overcook.  If you don't have the confident, turn the heat to medium before adding the BBQ pork
