[通少食譜] 玉鮑配蝦仁 (Stir-fried shrimps with top shells)

 一個非常低卡路里的菜色, 而且步驟都非常之簡單, 味道以清淡為主
今次係我第一次用罐頭玉鮑, 切片去煮, 味道都唔錯, 不過我見減價先買, 味道同質感都幾得意, 大家不妨試一下啊

.: 材料 Ingredients :.
1- 玉鮑1罐250克左右 (1 cane of Top Shell, about 250g)
2- 甜椒(任何顏色)1個, 去囊, 切件 (1 bell pepper (any color), core removed, cut into pieces)
3- 粟米仔8條, 切半 (8 baby corn, halved)

4- 中型洋蔥半個, 去皮, 切件 (1/2 of medium size onion, peeled, cut into pieces)
5- 無頭中蝦約350克, 去殼 (Headless shrimps, medium size, shell removed, 350g
)
6- 甜豆約150克, 去筋 (Sweet snap peas, strings removed, 150g)
7- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)

.: 醃料 Seasoning :.
1- 鹽2/3茶匙  (Salt, 2/3 tsp)
2- 白胡椒粉1/2匙 (White pepper, 1/2 tsp)
3- 粟粉1湯匙 (Corn starch, 1 tbsp)
 
.: 汁料 Sauce mixture :.
1- 麻油2/3茶匙 (Sesame oil, 2/3 tsp)
2- 玉鮑罐內的汁1/2杯 (Juice from the cane of Top shell, 1/2 cup)
3- 粟粉2湯匙 (Corn starch, 2 tbsp)
4- 鹽2/3茶匙 (Salt, 2/3 tsp)
 
.: 做法 Directions :.  
Step 1:
 
蝦去腸, 再用2湯匙粟粉擦勻, 用清水洗淨抹乾, 再用醃料醃15分鐘備用, 同時間, 將玉鮑切片, 和甜豆一同"飛水"2分鐘, 盛起備用
Remove the vein from the shrimps. Coat it with 2 tbsp of corn starch. Rinse it well. Dry it and marinade it with the seasoning for 15 minutes.  Meanwhile, blanch the top shell with the sweet snap peas for 2 minutes.  Drain it well and put it aside.

Step 2:

易潔鑊落1湯匙油用中快火起鑊, 將蝦炒熟(約4-5分鐘), 盛起備用
Heat the non-sticky pan with 1 tbsp.  Stir-fry the shrimps until it is completely cooked (about 4-5 minutes).  Put it aside.

Step 3:
 
易潔鑊洗淨抹乾, 落1湯匙油用中快火起鑊, 加入蒜蓉, 洋蔥, 甜椒, 粟米仔連1/3茶匙鹽炒至洋蔥軟身(約2分鐘)  
Add in rice wine (preserve 2 tbsp for later), dark, light soy sauce, and rock sugar.  Cover and simmer over medium heat for 15-20 minutes or until the chicken is fully cooked.

Step 4:

加入熟蝦, 玉鮑和甜豆炒勻, 加入已攪勻好的汁料兜勻至杰身, 上碟即成
Add in the cooked shrimps, top shell, and the sweet snap peas; mix it well.  Add in the mixed sauce mixture. Stir-fry all the ingredients until the sauce is thickened.  Dish it up and serve it hot.

 

.: 小貼士 Cook's notes :.
1- 蝦用生粉擦勻能令蝦更乾淨, 更雪白
2- 不喜歡用罐頭內的汁, 可以用雞湯代替
