[通少食譜] 生財如意鮑 (Braised top shell and shitake mushroom)

新年菜式第二擊, 其實同之前那個差唔多, 但今次哩個係超級容易整好多啦, photo onion2065.gif而且熱量係超超超低
今次連肉都唔落, 無野要醃,  photo onion2073.gif當然慳好多時間, 為左令碟餸型啲, 我將啲瑤池成粒浸軟再去炆, 個賣相會豐富好多, 但你嫌麻煩當然可以整碎佢啦, 無問題的而玉鮑係超市就買到, 應該無咩難度喎, 買完切個片, 出出水就食得,  photo onion2064.gif完全唔需要點處理, 生菜又係用水煮一煮就搞掂
成個餸最重要係炆好啲冬菇就得, 只要冬菇炆的好, 味道自然好啊, 想唔到, 咁簡單就可以整到一個大菜,  photo th086_64color.gif一啲都無失禮啊

.: 材料 Ingredients :. 
1- 罐頭玉鮑片(大型的), 1罐, 切片(1 cane of large top shell, sliced)
2- 瑤柱8-10粒, 浸軟洗淨 (Dried scallop, soaked, cleaned, 8-10 pieces)
3- 冬菇10-14隻左右, 浸軟, 去蒂 (10-14 dried shitake mushroom, soaked, stemmed off)
4- 小型生菜1個, 切成大塊, 洗淨 (1 small lettuce, cut into large pieces, cleaned)
5- 薑片2塊 (Ginger root, 2 slices)
6- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)
7- 紅蔥頭1粒, 去皮, 切片 (1 shallot, peeled, sliced)
8- 粟粉2湯匙 + 凍水3湯匙, 攪勻 (Cornstarch, 2 tbsp + cold water 3 tbsp, mixed)
Group B
1- 薑片2塊 (Ginger root, 2 slices)
2- 蒜頭2粒 (Garlic, 2 cloves)
3- 青蔥2條, 切段, (Green onion, diced, 2 stalk)
4- 紹興酒2湯匙 (Shaoxing Wine (chinese cooking wine), 2 tbsp)
5- 水1公升左右 (Water, about 1 litre)

.: 汁料 Sauce Mixture :. 
1- 蠔油1湯匙 (Oyster sauce, 1 tbsp)
2- 冰糖5克 (Rock Sugar, 5g)
3- 雞湯1杯半, 約300毫升 (Chicken broth, 300ml)
4- 老抽 1茶匙 (Dark soy sauce, 1 tsp)

.: 做法 Directions :.  
Step 1:
  
冬菇加入1湯匙粟粉擦洗, 再用清水洗淨, 用1/2湯匙油用中快火燒熱, 加入蒜頭, 紅蔥頭, 薑片, 冬菇, 將冬菇每面煎香 (約2分鐘)

Mix 1 tbsp of cornstarch with the mushroom.  Rinse it under the cold water until the mushroom is clean.  Dry the mushroom well with the paper.  Heat the pan with 1/2 tbsp of oil over medium-high heat until hot. Add in the garlic, shallot, ginger, and mushroom. Pan-fry the mushroom both sides for 2 minutes. 
 
Step 2: 

將瑤柱鋪在冬菇上, 加入汁料煮滾, 轉慢火, 蓋頂炆12分鐘, 差不多炆好冬菇前2-3分鐘, 將生菜於滾水中煮至軟身(約2分鐘), 隔好水, 上碟備用
 
Place the dried scallop on top of the mushroom.  Add in the sauce mixture and bring it to boil.  Turn the heat to low.  Cover and simmer for 12 minutes.  2-3 minutes before the mushroom is cooked, cook the lettuce in a boiling water for 2 minutes or until it is soft.  Drain it well and dish it up.

Step 3:
 
將Group B 材料煮滾, 放入玉鮑片煮3分鐘, 取出(其他材料可以不要)隔水, 冬菇料中小心取出瑤柱, 轉大火, 再加入玉鮑片兜勻, 逐少加入粟粉水煮至汁杰, 將凍菇放再生菜上, 再鋪上瑤柱, 最後舖上玉鮑片於中間, 淋上汁料即成

Bring the group B ingredient to boil.  Add the top shell slices and cook it for 3 minutes or until it is soft.  Drain it well.  Discard everything except the top shell slices.  Remove the scallop from mushroom mixture carefully and put it aside
.  Add the top shell slices into the mushroom mixture and mix it well.  Turn the heat to high.  Add in the corn starch mixture and stir constantly until the sauce is thickened.  Put the mushroom on top of the lettuce.  Then add the scallop on top of the mushroom.  Add the top shell in the middle.  Pour the sauce over and serve it hot.
 
.: 小貼士 Cook's notes :.
1- 不要拔掉瑤柱的硬塊, 否則像我一樣, 炆完會很容易散開, 你可以上碟後, 淋汁前才拔掉, 那它就能保持完整 
2- 玉鮑片其實沒有甚麼腥味, 但保險一點, 用Group B 的材料就能清除腥味
3- 汁料中的雞湯, 可以用冬菇及玉鮑水代替
4- 冬菇用粟粉擦過, 再清洗時, 就能帶走它的異味及黏在表面的骯髒物
5- 最後加粟粉水前先試味, 再好好調整一下味道, 然後才逐少加入粟粉水, 當汁杰就好停了, 不需要全部用完的

1- Do not remove hard muscle from the scallop so it will not fall apart after simmered.
2- Group B ingredients are used to remove the fishy smell of the top shell if any
3- You can replace the chicken broth listed in the sauce mixture by the water used to soak the mushroom.
4- Corn starch can remove the stink and the dirt on the mushroom that is usually hard to remove
5- Season the sauce mixture according to your preference before adding the corn starch mixture.
