[通少食譜]韓風冬瓜5層肉 (Stew pork belly with winter melon in Korean soy bean sauce)

.: 材料 Ingredients :. 
1- 五花腩400克 (Pork belly, 400g)
2- 冬瓜600克左右, 去皮去囊, 切件 (Winter Melon, peeled, core removed, cut into large pieces, 600g)
3- 清雞湯300毫升 (Chicken broth, 300ml)
4- 白胡椒粉1/2茶匙(White pepper flake, 1/2 tsp)
5- 薑片3塊 (Ginger slices, 3 slices)
6- 蒜蓉1湯匙 (minced garlic, 1 tbsp)
7- 紅蔥頭2粒, 去皮, 切片 (Shallots, peeled, sliced, 2 pieces)
8- 青蔥1條, 去白切段 (Green onion, stemmed off, sectioned, 1 stalk)






.: 汁料 Sauce mixture :.
1- 韓國辣椒醬1湯匙 (Korean chili sauce, 1 tbsp)
2- 韓國麵豉醬2湯匙 (Korean soy bean paste, 2 tbsp)
3- 麻油1茶匙 (Sesame oil, 1 tsp)


.: 做法 Directions :.
Step 1:

五花腩切成麻雀般大少, 放入煲內, 加入凍水至蓋過豬肉, 用中大火蓋頂煮至滾, 再煮15分鐘, 豬肉沖凍水洗淨, 隔水備用

Cut the pork into large cubes (2cm wide X 4 cm large).  Add the pork into a pot and cover it with cold water.  Cover and heat it up with medium high heat until the water is boiled.  Continue to cook for 15 minutes.  Rinse the pork under cold water.  Drain it well and put it aside.

Step 2:

易潔鑊中火落1湯匙油起鑊, 加入紅蔥頭, 薑片, 蒜蓉, 青蔥兜勻炒2分鐘, 加入五花腩粒兜勻炒4分鐘 

Heat the pan with 1 tbsp of oil over medium high heat.  When the pan is hot, add in shallot, ginger, garlic and green onion.  Stir-fry ingredients for 2 minutes.  Add in the pork and stir-fry for another 4 minutes

Step 3:

加入冬瓜炒2分鐘, 再加入雞湯和白胡椒粉攪勻, 蓋頂煮10分鐘或至冬瓜變腍, 再加入汁料煮至溶化, 蓋頂再煮3分鐘, 上碟即成 

Add in the winter melons and stir-fry it for 2 minutes.  Add in the chicken broth and white pepper.  Cover and simmer for 10 minutes or until the winter melon is soft.  Add in the sauce mixture.  Stir the sauce mixture ingredient melted completely
.  Cover and simmer for another 3 minutes.  Dish it up and serve it hot.
.: 小貼士 Cook's notes :.
1- 冬瓜不需煮得太耐, 否則就會很容易煮至溶化
2- 豬肉用凍水出水, 能令更多血水排出, 豬肉煮時會比較乾淨
3- 豬肉若過太難切開的話, 可以先飛水5分鐘令它變硬身才切開再煮

1- Do not overcook the winter melons or it will melted into the sauce.
2- Soak the pork into cold water before blanching will help to clean the pork better
3- If it is too difficult to cut the pork when it is raw, blanch the entire pork for 5 minutes.  It will become harder so that you can cut it easily.
